The exigency of proficient modern processes integrates itself with the handcraft method of wine-making.
The cave is digged in the "tufo", in order to preserve a perfect climate of wine conservation during warm periods. The temperature is almost constant all the year and the humidity is ideal to create an excellent room for wine ripeness.
The cave is equipped with steel casks to limit wine-making of about 70 quintals and the maximum production of 8.500-9.000 bottles a year.
